    Perfect Iced Tea Recipe

    Ingredients 6-8 tea bags 4 cups hot water 1 quart cold water ½ cup sugar or ¼ cup honey, optional Directions Bring 4 cups of water to a boil. Drop in the tea bags in and steep for only 10-12 minutes, otherwise it will be too strong and tannic tasting. After steeping, take out the bags, squeeze gently and discard them. (Unless, of course, you were brought up in a house like mine, where tea bags are re-used three times. Probably why I became a chef.)     Earl Grey Martini

    Gin and Earl Grey tea combine to make the most sophisticated cocktail in town. Ingredients 50ml/2fl oz gin 35ml/1½fl oz strong cold Earl Grey tea 20ml/¾fl oz lemon juice 12.5ml/½fl oz sugar syrup ½ free-range egg white twist lemon peel, to garnish Method Place the gin, Earl Grey tea, lemon juice, sugar syrup and egg white into a cocktail shaker and shake well. Double strain the liquid into a Martini glass and garnish with a lemon twist.

    Matcha Green Tea Cupcakes

    Ingredients For the cupcakes 175g Butter (unsalted) 175g Unrefined golden caster sugar 175g Self-raising white flour 0.25 tsp Baking powder 0.5 tsp Vanilla extract 1 tsp Matcha tea (powder) 3 Egg(s) (free range) (large) For the icing 350g Icing sugar 175g Butter (unsalted) 1 tbsp Water 1 tsp Matcha tea (powder) 1 tsp Vanilla extract Method Preheat the oven to 180°C (160°C fan, gas mark 4).
